Tournedos are some of the most delicious things you can make with beef tenderloin, where the meat really shines. Here, Brian Mark, head chef at Søllerød Kro, guides you on how to sear your tournedos perfectly in a pan.

Ingredients

tournedos

tbsp
grapeseed oil
100
g
butter
1
clove
garlic, crushed
A few sprigs fresh thyme
A sprig fresh rosemary
Salt
Pepper
Avoid screen shutting off
Instructions
Step 1/8
Heat a pan over medium heat. When the pan is hot, add grapeseed oil.
Step 2/8
Place one seared side of the tournedos on the hot pan, and season with salt and pepper.
Step 3/8
Let the tournedos caramelize without touching them. When the seared side is caramelized, flip them, and repeat the process.
Step 4/8
When the other seared side is caramelized, reduce the heat, and add butter, thyme, garlic and rosemary.
Step 5/8
Baste the meat with the butter while you finish cooking it as you prefer.*
Step 6/8
Remove the tournedos from the pan, pour butter and herbs over them, and let them rest for as long as they have been on the pan.

Slice, season to taste and serve.

* Brian Mark sears his tournedos on high heat for two minutes on each side, and then finishes them on low heat for an additional two minutes.
