Oysters are a refined dish in themselves with a couple of drops of lemon juice and perhaps a splash of Tabasco. They become even better with a sherry vinaigrette. And if you really want to impress your guests, you can do as here and top them with a homemade berry granita.

red berries, e.g. strawberries, currants and raspberries

Optional fresh herbs or flowers for garnish

Instructions
Step 1/5
Blend the berries into a fine puree. Squeeze the lemon.
Step 2/5
Boil sugar and water until the sugar is dissolved.
Step 3/5
Add lemon juice and berry puree, sieve if desired, and pour the mixture into a freezer-safe container with a lid.
Step 4/5
Place the container in the freezer for 4-5 hours, and scrape the top of the granita with a fork.
Step 5/5
Open oysters, arrange the granita on top, and garnish if desired with fresh herbs or edible flowers.
