Meet Thomas Rode Andersen
Thomas Rode Andersen qualified as a chef in 1990 and has since worked in several of the country's finest restaurant kitchens. For 18 years he was head chef at the 1-Michelin-star restaurant Kong Hans Kælder in Copenhagen.

Beyond his work in the kitchen, he has written books, appeared in films and TV programmes, taught, coached, run cookery schools, developed products, served as a judge, and much more. He is also co-owner of the online food market Rigtigmad.dk and hosts the podcast Kok og Kok imellem.

Use the spice grinder to make your own blends
I'm really fond of the excellent spice grinders from Gastrotools – you can make pepper blends exactly to your own taste. You could use different types of pepper, coriander seeds, allspice berries, or cloves in your blends.

Grind them fresh, because the essential oils inside the spices are only released when you break the shell – and the spice grinders are really excellent at that.
