It's both easy and delicious to have a portion of grilled lobsters with herb butter and citrus on the table. Outside of wild garlic season, you can use finely chopped garlic instead.

mixed herbs, e.g. lemon thyme, leek, dill and parsley

wild garlic

small organic lemon

unsalted butter

lobsters
Salt and pepper

Instructions
Step 1/4
Pick the herbs and chop them together with wild garlic. Cut the lemon into fillets.
Step 2/4
Melt the butter in a pot, add the herbs and lemon fillets, and season with salt and pepper.
Step 3/4
Split the lobsters lengthwise with a sharp knife. Remove the intestinal vein and grill them for 2-3 minutes depending on size, until they are just cooked through.
Step 4/4
Pour the warm herb butter over when serving.
